Pizza without a ding dong!

 
Vegan Pizza of delish

There are so many ways to have your pizza base and so many great combinations of toppings that pizza is simple and easy to make. You can either make your own base or buy a ready mad vegan base whichever way you choose the results are always yummy and a great way for everyone to get involved.
 
Who needs takeaway

Ingrediants

Base
11/2 tablespoons active dried yeast
1 cup of lukewarm water
pinch of sugar
1 tsp salt
3-31/2 cups of plain flour, preferably strong

Topping
3 tbs tomato puree, tsp dried basil, pinch of salt and pepper and a little olive oil makes the base sauce.
2 red peppers chopped finely
1 tin of sweetcorn, drained
1 red onion, finely diced
7-8 mushrooms sliced
1 tin of pineapple, drained
vegan cheese of your choice ( i used a melting variety )


Method
1. Warm a medium mixing bowl by swirling some hot water in it. Drain, place the yeast in the bowl, pour on the warm water. Stir in the sugar, mix with a fork and allow to stand until the yeast has dissolved and starts to foam, 5-10 mins. 
2. Use a wooden spoon to mix in the salt and a third of the flour. mix in another third of the flour, stirring with a spoon until it begins to pull away from the sides of the bowl.
3. sprinkle the remaining flour onto a smooth work surface. Knead working in a little flour at a time.This will take about 8-10 minutes. The dough should be elastic and smooth. Form it into a ball.
4. Lightly oil a  mixing bowl. Wet a tea towel, wring it out and place over the bowl. Leave in a warm place for 40-50 mins. You can let it rise in the oven too, put the oven on medium heat and then switch it off before you knead the dough. Place it inside to rise until its doubled in size.
5. Punch down the dough to release the air. Knead for 1-2 minutes. Makes 2 - 4 pizzas depending on size. Pat the ball of dough into a circle on a lightly floured surface.Roll out to about 1/4 of an inch thick. 
6. Place on a lightly oiled pan. Folding the edge under to make a larger rim.
7. Make up the base sauce and brush onto the pizza base. Top with chosen assorted chopped vegetables and vegan cheese. I dont overload the pizza as this causes too much water to leak from the vegetables and you end up with a soggy base. 
8. Bake at 250/475/gas9 for 15-20 minutes.
