Aloo Gobi spoon fodder

Eat me all day Aloo Gobi

I found this most amazing lady who cooks the best indian food on utube, Manjulas Kitchen. She has a really cool website too, check her out if you want the best food ever,  I used one of her recipes and adapted it to my kitchen cupboard items which worked a treat.
 
Seriously great dish
Ingrediants

2 cups of cauliflower cut into small florets,
2 medium potatoes cut into bite size pieces
1/2 inch piece of ginger shredded
2 spring onions ( my own addition )
3 tsps of coriander powder ( dhania )
1/4 tsp turmeric ( haldi )
1/4 tsp cayenne pepper ( lal mirch )
3 tbs of water
3 tbs of oil
Pinch of Asafetida (Hing)
1/2 tsp cumin seeds ( Jeera)
2 green chillies ( i used one ), deseeded and sliced into long pieces
2 bay leaves
1 tsp salt
1 tsp mango powder ( i didnt use this )
2 tbs of chopped coriander
1/4 cup of water as needed

all waiting to be made into something wonderful  


Method

1. In a small bowl  mix the shredded ginger,coriander powder, cayenne pepper, turmeric with 3 tbs of water to make a thin paste.
2. Heat the pan with the oil, add the jeera seeds and hing to the oil until they crack. Add the chilli and the two bay leaves.
3. Add the spice paste and stir for a minute until the seeds start leaving the oil.
4. Add Cauliflower, potatoes and 2 tbs of waterand salt. Mix well. Cover the pan but check every 3 minutes to stir the mixture if it gets too dry add some water and keep going in this method until about 15-20 minutes. Test the vegetables to make sure they are tender.
5. Add the mango powder and fresh coriander ( you can also use flat leaf parsley ). Adjust the seasoning to taste. 
6. Serve with either Roti or Rice but you cannot beat this wonderful simple recipe.
