I'm sure the cookie monster would love these.
Ingrediants
2 cups wholemeal flour
2 tsp. baking powder
1/4 tsp salt
1/2 cup vegetable oil
1/2 cup brown sugar
1/3 cup Maple Syrup
1 tsp. vanilla essence or 1 tsp vanilla bean paste
2 tsp. cinnamon
1/2 tsp ground ginger
1/2 tsp. ground nutmeg
1/2 cup chocolate chips
2 tbsp of water
happy cookie dance!
Method.
1. In a bowl add flour, baking powder, salt, brown sugar, cinnamon, ginger and nutmeg. Give it a good stir.
2. Add the vegetable oil, maple syrup, vanilla and water. Mix well.
3. Add chocolate chips to the flour mixture and then add the wet ingrediants to the dry. Stir really well and add a little more water if its too dry.
4. Break off golf ball size pieces and form into a ball, flatten it with the palm of your hand. Keep going with this method until all the mixture is used. You may need to smoosh the mixture together at times.
5. Place on a baking sheet greased or with baking paper or a silicone baking sheet works well too.
6. Bake at 180C (375F) for 8-10 minutes.
5. Let the cookies cool slightly before lifting them onto a wire rack.
