Seitan and veg fajita filling
Yummy fajita |
Ingrediants
2 peppers, deseeded and sliced
1 large onion, chopped
2 cloves of garlic, chopped
6 large mushrooms, thick sliced
1 seitan steak, thinly slced
3/4 cup of turtle beans or any beans you like
2 tsps of fajita seasoning ( you can use more if you like it hotter )
Tin of tomatoes
Dried parsley ( or fresh )
1 Tbs of oil
A little water

Method
1. Get a large frying pan on a medium high heat. Put in the oil and add the onions and fry for about 3 mins until softened.
2. Add the garlic and the 2 tsps of fajita seasoning and fry for a couple of mins, add a little water if it looks too dry.
3.Add the sliced seitan so it can take on some of the spices and fry a little.
4. Add the peppers and mushrooms and continue frying until the vegatables start to soften.
5. Add the tinned tomatoes and a tsp of dried parsley.
6. Leave it to simmer stirring regularly until the sauce has thickened and reduced.
7. Add the turtle beans or any beans you love and let them heat through.
8. Serve with tortillas ( I like garlic and herb variety ) and lettuce with tomatoes. You can also add some vegan mayonnaise to make it spicy and creamy.
N.B I was going to take a photo of the finished filled tortilla but ate it before hee hee. Next time i may update with a picture before filling ones face........cant promise!
