Mexican style rice
Blend and add to the rice |
350g long grain rice ( i used basmati in the photos )
2 tbsp olive oil
Tin of tomatoes
2 tbsp of tomato puree
3 cloves of garlic
2 tsps of cumin
1 tsp of mild chilli powder
salt and black pepper
A pint of water
2 peppers red and orange
3 spring onions
Juice of 1/2 a lemon
Cook the rice in the oil |
